Sunday spoil: Classic lemon tart

Treat your family to a classic citrus dessert exploding with flavour.

You’ll need: ½ cup butter, softened; ¼ cup icing sugar, sifted; 1 cup all-purpose flour, sifted; 1 cup Illovo White Sugar; 2 eggs; 3 Tbsp all-purpose flour; 3 Tbsp fresh lemon juice; 2 tsp grated lemon peel; ¼ tsp salt; 3 Tbsp icing sugar

How to:

Preheat the oven to 180°C and grease a baking pan.

Combine butter with ¼ cup icing, mix until smooth and stir in 1 cup flour.

Press dough into the baking pan and pierce the crust with a fork in different spots to avoid the crust from puffing up during baking.

Bake crust in the oven for 10 to 15 minutes or until golden brown, then let cool.

Whisk Illovo White Sugar and eggs in a bowl, stir 3 tablespoons of flour into the mixture and add the lemon juice, lemon peel, and salt.

Whisk until thoroughly combined and pour the mixture into the baked tart crust.

Bake until filling is set for 20 to 25 minutes. Let cool and dust with 3 tablespoons icing sugar.
