For the crunchies

  • 250g butter
  • 1 tbsp golden syrup
  • 1 cup brown sugar
  • 1 tsp vanilla essence
  • 1 tsp bicarbonate of soda
  • 2 cups oats
  • 1 cup cake flour
  • 1 cup desiccated coconut
  • ½ tsp salt

For the trains

  • 125ml icing sugar
  • 18 Jelly Babies
  • 2 x 400g Liquorice Allsorts

Method

  1. Preheat oven to 180°C. Line a 19cm x 26cm baking dish with baking paper. Heat the butter on medium until melted. Stir in the syrup and sugar and bring to a boil. Stir in the vanilla and bicarbonate of soda.
  2. Combine the oats, flour, coconut, and salt. Stir in the butter mixture. Press into the prepared dish until flat. Bake for 15 minutes. Turn oven down to 160°C and bake for about 10 minutes until golden brown. Cool in the pan. Slice into 18 bars.
  3. For the trains, combine the icing sugar with just enough water (about 10ml) to form a thick icing to use as “glue” to stick the Jelly Babies and Liquorice Allsorts onto the crunchies to form tractors.

Quick cake lollies

These cake lollies are gluten and sugar-free, so if you prefer to serve healthier party treats for kids, this is a great recipe to try.

*Makes about 8

Ingredients

  • 1 egg
  • ½ tbsp water
  • 2 tbsp cream cheese, at room temperature
  • 1 tsp vanilla essence
  • 1⁄3 cup almond flour
  • ½ tsp gluten-free baking powder
  • Pinch ground cinnamon
  • 1 tsp granulated xylitol
  • Food colouring of your choice
  • ¼ cup xylitol icing

Method

  1. Blitz the egg, water, cream cheese, and vanilla in a blender until smooth. Add the almond flour, baking powder, cinnamon, and granulated xylitol. Divide between 3 bowls and colour each. Set aside for 2 minutes.
  2. Remove the glass plate from the microwave and place a piece of baking paper on top, then grease with cooking spray. Add a teaspoonful of each colour on top of each other and insert a skewer. Repeat with the rest, (you should be able to do 4 at a time). Microwave for about 20 seconds until cooked. Cool.
  3. Combine the xylitol icing and about 1 tsp water to form a thick icing that should be able to drizzle. Add colour, if you like. Drizzle over the cakes.
