What’s for dinner? Cheesy chicken and sweetcorn casserole

Quick and easy to make, filling, budget-friendly, freeze well, and feed the whole family in one go! Bonus.

Serves 6 – 8 

You’ll need: 600g Harvestime Sweetcorn; 2 cups Harvestime Straight Cut Chips; 800g cooked chicken chopped into bite-size pieces; 4 tablespoons butter; ½ cup flour; 1-litre milk – warmed; 3 tablespoons dried herbs of choice; 2 cups grated cheese; salt and pepper to taste.

How to: 

Preheat oven to 180°C.

In an ovenproof casserole place the frozen chips and sweetcorn and season with salt and pepper.

Now add the chicken on top of the frozen veg and keep aside.

Meanwhile, in a pot, melt butter, add flour and mix until incorporated.

Slowly add the milk to the flour and butter mixture, mix well to break lumps.

Whisk constantly until it starts to thicken – add dried herbs.

Remove from the heat. Add cheese and mix well. Adjust seasoning.

Pour the cheesy sauce over the chicken and veg. Bake for 20 minutes.

Top with cheese and bake for a further five minutes until cheese has melted. Garnish with chopped parsley.
