Meatless Monday – Harissa veg and couscous salad

Brighten up the start of the week with this flavourful and filling meat-free dish.

Serves 4 – 5

You’ll need: McCain Roast Harissa Glaze – Mediterranean; couscous steamed and set aside; 1 packet mixed lettuce leaves; 100g olives; 1 punnet cherry tomatoes; 1 red onion sliced; 1/3 cup almonds chopped. 

For the dressing – 30ml olive oil; juice of a small lemon; 1 teaspoon Sumac; 1 teaspoon Cayenne pepper; salt and pepper to taste.

How to: 

Cook the Roast veg according to package instructions and set aside.

Combine all the dressing ingredients and mix well;

In a large bowl, add the couscous, next add the mixed lettuce leaves, olives, cherry tomatoes and red onion.

Drizzle some of the dressing onto the salad and add the almonds.
