Sweet and sour pork dumplings

Method

  1. Place the diced pork in a medium mixing bowl, then add the soy sauce and stir to coat all over. Cover and leave to marinate in the fridge.
  2. Add the flour, water, salt, and oil in a separate mixing bowl and stir until smooth. Cover and refrigerate until ready to cook (can be done a few hours in advance).
  3. Heat enough oil in a medium size pot for deep frying (about 4-5 cm deep). Test a drop of batter in the oil – if it sizzles moderately, it is ready (you’re looking for about 180 C).
  4. Using small tongs or clean hands, drop a few cubes of marinated pork at a time into the batter, coating it on all sides, then place them one by one into the hot oil, not overcrowding the pot. Fry until golden. Turn the balls over if necessary, remove them with a slotted spoon, and drain them on kitchen paper.
  5. Serve hot with sweet and sour sauce on the side. Note: These nuggets won’t keep their crunch forever, so they are best served straight after preparation.
