Sunday spoil – Roasted plums with cinnamon dumplings
A seasonal plum pudding is the perfect Sunday spoil for the family. If you are not counting calories, add a dollop of vanilla ice cream.
Roasted plums with Cinnamon Dumplings
Serves 4
Ingredients
4 plums, halved & pitted
2 Tbsps sugar
1 tsp vanilla
50ml water
1.5 cups self-raising flour
1 tsp baking powder
1/4 cup sugar
Pinch salt
1 tsp ground cinnamon
50g butter
1 Large egg
60ml amasi/buttermilk
1 tsp vanilla
For cinnamon sugar:
2Tbsps sugar
1tsp ground ginger
Method
- Preheat oven to 180c.
- Place the plums into a roasting dish, sprinkle with sugar, drizzle with vanilla and water, cover with foil and roast for 30 minutes.
- In a bowl, mix together self raising flour, baking powder, sugar, salt and cinnamon.
- Add the butter and rub together using your fingers until the mixture resembles breadcrumbs.
- Add egg, amasi and vanilla, then stir until combined into a thick batter.
- Bring a pot of water to a simmer, then drop spoonfuls of the batter into the water to form the dumplings.
- Allow to simmer gently for 20 minutes, gently turning halfway through, until the dumplings are cooked through. Serve the roasted plums topped with the dumplings and a generous sprinkle of cinnamon sugar.
