A mouthwatering pastry snack for New Year’s Eve
Don't go hungry going into 2023. Here is a mouthwatering pastry snack recipe to try out at your New Year's Eve party thanks to Caxton Magazines' former We Know Food recipe book.
Several years ago, Caxton Magazines at the time released its first We Know Food – a 42 hand-picked recipe book. It was something that the General Manager at the time, Anton Botes said, “Is one we are delighted to share with you”.

Below is a mouthwatering snack recipe to try out at your New Year’s Eve party:
Blue Cheese and Butternut Bites (Serves 32):

What you’ll need:
• Two 400g puff pastry rolls
For the filling:
• Oil (for frying)
• One onion (diced)
• Half a tsp minced garlic
• 500g butternut (peeled and cubed)
• Salt and pepper to taste
• Quarter cup castor sugar
• One and a half cups grated mozzarella
• Half a cup crumbled blue cheese
• Three tbsp fresh parsley (chopped)
• Three tbsp spring onion (chopped)
For the topping:
• One tbsp milk
• Three tbsp pumpkin seeds
• One tbsp poppy seeds
Method:
• Heat the oil in a pan and sauté the onion and garlic until soft. Remove from the heat
• Place the butternut in a bowl with two tsp water, cover with cling wrap and microwave on high for five minutes or until soft. Drain any water and add the butternut to the onion mixture. Gently stir in the remaining filling ingredients and allow to cool
• Heat the oven to 220 ºC, Roll one puff pastry roll into a rectangle and make sure one of the longer sides is facing you. Cut the pastry in half horizontally to form two long rectangles. Repeat with the other puff pastry roll
• Divide the mixture into four and spread each quarter in the middle of each rectangular pastry strip, leaving a border around the edges of the pastry. Coat the pastry edges with water and bring them together to form a log. Turn the log over carefully
• Cut the log into bite-sized pieces of about 3cm and place on a baking sheet. Brush the bites with milk and sprinkle with pumpkin and poppy seeds.
• Bake in the oven for 10 minutes. Turn the heat down to 180 ºC, baking for another 10 to 15 minutes until golden brown. Serve piping hot as soon as they come out of the oven.
