What’s for dinner? Alfredo pasta rice with streaky bacon

This creamy one-pan Alfredo pasta rice with mushrooms and crispy bacon is an easy and flavourful dish that's perfect for a quick midweek dinner.

Serves 4

You’ll need: 200g Eskort Rindless Streaky Bacon, sliced into squares; 500ml pasta rice; 125ml leeks, chopped; 45ml thyme, chopped; 750ml mushrooms, chopped; 1 clove garlic, chopped; 500ml vegetable stock; 500ml water; 250ml cream; 125ml Parmesan cheese, grated; salt and pepper; olive oil for cooking.

How to:

In a frying pan over moderate heat, fry bacon, thyme, mushrooms and garlic in olive oil until bacon is golden brown.

Add pasta rice and fry for 1 minute.

Add stock, water and cream. Stir through and allow to simmer for 10 minutes.

Serve topped with grated Parmesan cheese and extra crispy streaky bacon, if desired.
