Chicken stir-fry


What you’ll need:

  • 400g chicken breasts
  • 350g frozen veg pre-packed mix of choice
  • Pack of egg noodles
  • 20ml olive oil
  • salt and pepper
  • 50ml soy sauce
  • teaspoon of fresh grated ginger
  • chilli flakes (to taste)

Method:

  • Firstly you’ll need to boil your noodles in a cooking pot until al dente – that is until the noodles are soft but firm. Once the noodles are al dente, drain them in a sieve and set aside.
  • Cut the chicken breasts into bite-sized chunks and lightly season with salt and pepper.
  • In a frying pan or wok, pour in the olive oil before turning on the heat.
  • Add the chicken first as this takes the longest to cook through. Allow the chicken to simmer for around 5 minutes while continuously tossing before adding the vegetables. Keep stirring and tossing the mix while it fries.
  • Add the soy sauce, ginger and seasoning.
  • Finally, add the noodles and allow to heat up.

Serve and enjoy!

Cottage Pie


What you’ll need:

  • 10ml olive oil
  • 1 large brown onion, chopped
  • 3 garlic cloves, crushed
  • 900g lean beef mince
  • 1/4 cup red wine
  • 1 cup beef stock
  • 400g can diced tomatoes with oregano and basil
  • 1.2kg potatoes, peeled, chopped
  • 50g butter
  • 1/2 cup milk
  • 1/4 cup grated cheddar cheese

Method:

  • Preheat your oven to 180°C. Heat the oil in a non-stick frying pan over medium-high heat. Start frying the mince and keep stirring with a wooden spoon to break up the mince for eight to 10 minutes or until browned. Transfer to a bowl.
  • Add the onion and garlic to the frying pan and cook until softened, continuously stirring.
  • Return mince to the pan and add wine and tomato mix. Bring to the boil. Reduce heat to medium-low. Simmer, stirring occasionally, for 25 to 30 minutes.
  • In the meanwhile, cook the potatoes in a saucepan of boiling, salted water for 10 to 12 minutes or until tender. Drain before returning to the pan over low heat. Mash until smooth. Add the butter and milk and stir until butter has melted and the mixture is combined.
  • Spoon mince mixture into a 1.4-litre casserole dish, top with potato mixture, sprinkle with cheese and bake for 20 to 25 minutes or until golden.

Minestrone Soup


What you’ll need:

  • 2 strips of bacon
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 5ml Worcestershire sauce
  • 1/2 cup canned red beans, rinsed and drained
  • 1/2 cup canned diced tomatoes
  • 250g cup frozen mixed vegetables
  • 500ml broth
  • Salt and pepper
  • 1/2 cup small pasta (conchigliette)

Method:

  • Fry the bacon in a saucepan until crispy and then dice before setting aside in a paper towel.
  • Add the chopped onion and minced garlic to the pan.
  • Add the red beans, vegetables, tomatoes, broth and Worcestershire sauce.
  • Add the cooked bacon.
  • Add the 1/2 cup of pasta.

Serve and enjoy with your choice of gourmet bread.
