Sesame seeded prawn toasts

Ingredients:
+/- 200g shelled prawn meat, minced
2 spring onions, finely chopped
½tsp crushed garlic
½tsp crushed ginger
1 tsp finely chopped fresh coriander
4 x 2 day old bread slices (preferably LOW GI)
4 tblsp sesame seeds
Salt
500ml frying oil
100ml Chopped Chilly & Olive Oil
lemon wedges
Method
Mix together the prawn meat, onion, garlic, ginger and coriander, add seasoning.
Thickly smear the prawn paste onto the bread and press into the sesame seeds creating a sesame crust.
Carefully heat the oil and fry the bread slices (turning over and over a few times), drain on kitchen paper towel.
Serve with sweet chilli dipping sauce and lemon wedges
