Marina’s 47 years in the industry began at age 11, working in her mother’s popular Three Sisters Cafe, igniting a lifelong love for hospitality. By 24, she had secured the role of Manager’s Assistant at the Ritz in London, mingling with royalty, aristocrats, and international personalities, a position that firmly anchored her in the world of fine dining.
Returning to her roots, Marina went on to launch five successful restaurants, with Old Ducky marking her sixth triumph. Here, she persuaded celebrated chef Freda Appelbaum, her partner in excellence, out of retirement. Freda’s legacy includes a remarkable 25-year tenure at the award-winning Le Canard, where she mastered classic and contemporary French cuisine.
Revered in the culinary world, Freda was honored as a Disciple of Escoffier, awarded membership in the Chaîne des Rôtisseurs, and earned numerous national and international accolades.
While Le Canard attracted celebrities, politicians, and musicians alike, Freda’s genuine warmth ensured that every diner felt like a cherished guest. Together, Marina and Freda bring a blend of expertise, dedication, and old-school grit to Old Ducky, establishing it as a distinguished destination for local and international guests.
