Tempo Luxury Restaurant celebrates a year of excellence with a festive recipe

The restaurant bagged awards that represent the pinnacle of achievement in the luxury hospitality industry, according to the marketing manager of the restaurant.

Tempo Luxury Restaurant in Sunninghill is ending the year on a high note, having been awarded Africa’s Best Fusion Cuisine, Most Luxurious Ambiance, and Best Global Luxury Entertainment Restaurant at the prestigious World Luxury Awards in Bali.

This achievement shows the restaurant’s commitment to excellence and luxury in local and global contexts.

“This award is a humbling and exciting moment for our team and we look forward to continuing to elevate the Tempo experience,” said chef Tseolopele Mauba, junior sous chef at the restaurant.

To celebrate this achievement, and the festive season, Tseolepele is sharing a special recipe for cabbage parcel with chicken thighs, a dish that showcases the restaurant’s signature fusion cuisine.

“Cabbage parcel with chicken thighs is a hearty and flavourful dish that’s perfect for the festive season,” said Tseolopele.

“We’re excited to share this recipe with the community, and look forward to welcoming them to Tempo Luxury Restaurant to experience our award-winning cuisine firsthand.”

Here’s the recipe:

Ingredients:

• One whole cabbage
• One medium white onion
• Three celery stalks
• Three garlic cloves
• One medium carrot
• One red bell pepper
• One tablespoon of paprika
• Two tablespoons of chilli flakes
• One tablespoon of dried thyme
• One tablespoon tomato paste
• Two cups of cooked Basmati Rice
• Salt and pepper to taste

Method:

• In a pot with boiling water, add salt to the water. Drop the cabbage leaves in the water for three minutes. Remove the cabbage from the water, and place it in ice water.
• In a pan, sauté carrots, onion, peppers, garlic cloves.
• Add paprika, dried thyme, and chilli flakes to the vegetables, and cook the spices through. Add the tomato paste and ensure it cooks through.
• Add the rice to the vegetable mixture and mix well, season to taste.
• In a bowl put the rice to cool slightly, while laying out the cabbage leaves on a clean surface.
• On the cabbage leaf, place the desired amount of rice in the centre of the leaf. Fold tightly (sides fold in, top and bottom to wrap the sides in to secure the rice).
• In a pan at medium heat, pan sear the cabbage parcel on both sides, two minutes on each side.

Pair the cabbage parcel with chicken thighs, which can be prepared using the following recipe:

Ingredients:

• Five chicken thighs
• One tablespoon of garlic powder
• One tablespoon of onion powder
• Half tablespoon of black pepper
• Half tablespoon of paprika
• Half tablespoon of salt
• One tablespoon of lemon zest
• One tablespoon of extra virgin oil

Method:

• Pat the chicken dry, and cut off extra fat or skin.
• In a bowl mix all the spices together, drizzle the oil onto the chicken. Rub the chicken with the mixed spices front and back.
• In a hot pan sear the chicken until golden then set in a tray.
• Preheat the oven to 180 degrees; roast the chicken for 30 minutes.
• Reduce the sauce from the roasted chicken tray and set aside.
