Christmas roast leg of lamb

Not sure what to feed the family on Christmas Day? Try our easy, yet delicious oven-roasted leg of lamb recipe with potatoes and carrots.

Recipe:

Serves: 6

Prep time: 20 minutes

Cook time: 2 hours

Ingredients:

+- 1.5kg leg of lamb
6 potatoes, peeled and halved
4 carrots, peeled and cut into desired size
1 tablespoon olive oil
Fresh rosemary
1 bulb of garlic, crushed
Worcestershire sauce
Sea salt
Black pepper

Instructions:

Preheat the oven to 180°C.

In a bowl mix together olive oil, garlic, rosemary, Worcestershire sauce, sea salt and black pepper.

Place the meat into an oven-roasting tray and spread the marinade over.

Cover and leave in the fridge to marinate for about an hour.

Place potatoes and carrots into oven-roasting tray along with the lamb.

Cover with foil and place into oven.

Cook in oven for 1 hour.

When cooked remove lamb from roasting tray and place on a warm serving plate, cover with foil and leave to rest.

Tip: For a more tender and juicy piece of meat, allow the lamb to rest for at least 15 minutes after removing it from the oven. Carve and enjoy.
