Beat the Friday hunger blues with this quick and easy Chinese chicken fried rice recipe, guaranteed to be a hit in your household.

You have endured a long week filled with stress, and now it’s finally Friday….

All you want to do is kick off your shoes, lie back and relax. However, you’re quickly reminded that you still have a household to run and an entire family of hungry tummies staring at you, waiting for you to feed them…

So there you are, dragging your rear off the couch, staggering to the kitchen, only to get there and think, “What am I going to fix for dinner?”

We have put together a quick and easy chicken fried rice recipe, guaranteed to happily ease those hunger pains:

Fried rice is a dish that is meant to utilise leftover rice from a day or two earlier.

If you do not have leftover rice from the night before, cook a batch of rice and spread it out on a big baking sheet or several large plates.

Let the rice dry out for about 1 to 2 hours before making fried rice.

Ingredients:

  • 1 large onion (chopped)
  • 1 to 2 cups of mixed vegetables or any vegetables of your choice
  • Spice for rice to flavour the rice
  • Chicken strips
  • 3 large eggs beaten slightly
  • Soya sauce
  • Salt and pepper to taste
  • Chicken spice or spice of your choice

Making fried rice is fast, so have all of your ingredients ready and by the stove:

  • Dice your chicken into small cubes and salt it, whisk the egg, and make sure all the veggies are diced and ready to go.
  • Scramble the egg, and then remove it from the pan.
  • You want to cook the egg first so that it doesn’t end up overcooking and so that the egg stays in larger pieces.
  • Stir-fry the chicken, and then remove it from the pan, too.
  • Cook the vegetables, but leave them in the pan!
  • Add the rice, season it, and then add the egg and chicken back to the pan.
  • Serve hot and enjoy!
