#FeedmeFriday: three 15 minute meals to kick off the weekend
Had a long week but still need to eat? Don’t stress too much; we’ve got you covered with three quick and easy meal ideas that will take less than 15 minutes to prepare.
After a long week of work, running errands, and helping the kids with homework, the last thing anyone would care to do is linger in the kitchen for hours.
Friday evenings are for unwinding; not chopping onions…
That’s why quick and easy meals that can be made in under15 minutes are the perfect solution to start your weekend on a high note.
Whether you’re providing a hungry family with sustenance, treating yourself to some long-overdue comfort food, or simply looking for a way of keeping things simple and delicious, these simple recipes have all your bases covered.
So sit back, unwind and dive into the weekend with one of these simple yet satisfying meals.
Smash burger (12 minutes):

Ingredients per burger:
- ¼ of a small onion
- Olive oil
- 125g beef mince
- 1 teaspoon Cajun seasoning
- 1 burger bun
- tomato ketchup
- 2 gherkins
- American mustard, to serve
- 1 tomato
- 1 handful of mixed salad leaves
Method:
- Peel the onion, very finely slice into rounds, then break into rings and cook in a large non-stick frying pan with 1 tablespoon of olive oil for a few minutes, stirring regularly, then push to one side of the pan.
- Squash the minced meat into a rough patty about ½cm thick and a bit bigger than your bun and place in the pan. Season with black pepper and the Cajun seasoning, then move the onion rings on top and use a fish slice to really smash the onions into the meat.
- Cook for 2 minutes on each side, or until gnarly and cooked through, toasting the halved bun alongside for a minute.
- Spread the bun base with ketchup, sit the burger on top, slice and layer over 1 gherkin, squeeze over mustard to your liking, and pop the lid on.
- Slice the tomato and remaining gherkin to serve on the side with the salad leaves, or stuff it all into your bun, the choice is yours.
Chicken & mushroom noodles (15 minutes):

Ingredients:
- 200g Chicken breast tenders, breaded, uncooked
- 180 g Onions, Spring Or Scallions (Includes Tops And Bulb), Raw
- 146g 2-Minute Chicken Noodles
- 4 teaspoons of Oil, cottonseed, salad or cooking
- 8 slices Mushroom, white, exposed to ultraviolet light, raw
- 360g Nestle Dessert & Cooking Cream
- 4 springs of Parsley, Fresh
Metod:
- In a medium pan with hot oil, fry the chicken breast until golden brown for about 5 – 8 minutes and set aside.
- Cook 2 minute according to packet instructions.
- When the noodles are half cooked, drain and set aside. Toss them with little oil to prevent the noodles from sticking together.
- Heat cooking oil in a pan, saute spring onions until slightly brown and then add in mushrooms and cook until tender.
- Pour in NESTLÉ dessert & cooking cream. Let the mixture simmer to a thick consistency.
- Add cubed chicken breasts, adjust seasoning and give it a quick stir before turning off the heat
- Toss in the 2 minute noodles and sprinkle chopped parsley if desired.
Chicken mayo sandwich with a twist (15 minutes):

Ingredients:
- 1 cooked whole chicken chopped
- 1 onion chopped
- 1/2 celery stick chopped
- 60 ml mayonnaise
- 1 tbsp chicken spice
- 1/2 tsp peri peri spice
- 20 ml margarine for spreading
- loaf of sliced bread
- fresh lettuce or rocket to serve
Method:
- Combine the cooked chicken, onion and celery.
- Add the Robertsons spices to the mayonnaise and mix well.
- Stir the chicken mixture into the flavoured mayonnaise.
- Generously spread between slices of your favourite bread that have been spread with margarine.
- Top with fresh lettuce or rocket leaves.
- Serve and enjoy or wrap and pack for lunch.
