A healthier recipe for Banana Loaf

In the spirit of Banana Bread Day, don’t let your bananas rot, make use of this easy recipe and share it with someone.

Mother Theresa once said that in India, a woman dying on the street will share her banana with anyone whereas in America (and probably a lot of other countries) people hoard a mass of bananas to sell them at a profit only for them to go bad. In the spirit of Banana Bread Day, don’t let your bananas rot, make use of this easy recipe and share it with someone.

A healthier Banana Loaf recipe

Ingredients:

3 very ripe bananas

1/2 cup honey

3 tablespoons canola oil, plus a little more for oiling the loaf pan

1 teaspoon pure vanilla extract

1 1/2 cups whole wheat flour

1 1/2 teaspoons baking soda

1/4 teaspoon salt

3/4 cup chopped walnuts or 3⁄4 cup chocolate chips

Method:

  • Heat the oven to 180 degrees. Lightly oil a loaf pan.
  • Mash the bananas and mix with the honey, canola oil and vanilla extract.
  • Stir together the whole wheat pastry flour, baking soda and salt. Add the nuts.
  • Blend the two mixtures and spoon into a lightly oiled loaf pan. Bake for 40 minutes, or until centre is set.
  • Poke the centre with the back of a fork and if it comes out clean, your cake is ready.

Most banana bread recipes are saturated with butter and sugar. This one uses a small amount of canola oil instead – which is much better for your heart. Substitute the sugar with honey and you get added flavour. Don’t use regular whole-wheat flour if you can help it. It is too heavy for this recipe. Look for whole-wheat pastry flour instead.
