Make tonight a lasagna night

This recipe from What A Blast is quick and easy to prepare, making it perfect for either a busy weeknight or a relaxed weekend meal.

What you will need:

• 250g lasagna sheets (spinach or plain)
• 2 onions, chopped
• 1 green bell pepper, chopped
• 2 tsp fresh garlic, crushed
• 1 tbsp oil
• 750g lean beef mince
• 2 cans (115g each) tomato paste
• 2 tsp sugar
• ¾ cup boiling water
• ½ tbsp dried oregano
• 1 tsp Aromat seasoning
• ½ tsp black pepper
• ¼ cup chutney
• Salt, to taste
• ½ cup butter
• ½ cup flour
• 3 cups milk
• 1 cup grated cheddar cheese

Method:

• Heat the oil in a large pan and fry the onions, green pepper and garlic until they become soft and fragrant.
• Add the beef mince and cook, stirring regularly, until it is browned.
• Combine the tomato paste, sugar and boiling water in a bowl, then pour the mixture into the mince. Stir well and leave it to simmer for five minutes.
• Mix in the oregano, Aromat seasoning, black pepper and chutney. Allow it to simmer for another minute before seasoning with salt to taste.
• To prepare the white sauce, melt the butter in a microwave-safe measuring jug. Stir in the flour to form a smooth paste, then gradually whisk in the milk. Microwave the sauce, stirring every few minutes, until it thickens and is smooth.
• Spoon one-third of the white sauce into the base of a greased ovenproof dish. Arrange a layer of lasagna sheets on top, followed by half of the mince mixture.
• Repeat the layering process, ending with the remaining white sauce covering the top.
• Sprinkle the grated cheddar cheese evenly over the surface and let the assembled lasagna rest for 30 minutes.
• Once the cheese has been added, preheat the oven to 180°C.
• Bake the lasagna for 25 minutes after the resting time, or until the cheese has melted and turned lightly golden.
• Remove the dish from the oven, leave it to stand for five minutes, then serve and enjoy.
