The Durban Bunny Chow

Ingredients

1kg lamb pieces

½ cup vegetable-oil

2 large cinnamon sticks

1 teaspoon fennel seeds

1 bay leaf

6 green cardamoms

4 cloves

4 curry leaves

1 teaspoon crushed green chilies

1 large onion, finely diced

½ teaspoon turmeric

2 tablespoons crushed ginger and garlic mix

1 tablespoon white vinegar

2 teaspoons sugar

3 level teaspoons medium chili powder

1 teaspoon powdered cumin seeds

1 teaspoon powdered coriander seeds

1 teaspoon garam masala

2 tomatoes, diced

5 small to medium potatoes, diced not too small

1 Large carrot, diced, chopped fresh coriander leaves, salt and freshly ground black pepper to taste

Instructions

1. Heat oil in saucepan

2. Add cinnamon, cardamom, cloves, bay leaf and fennel

3. Stir continuously

4. Add curry leaves, chilies, onion, turmeric, ginger and garlic

5. Braise for 3-4 minutes stir, do not let it burn

6. Add garam masala and spices to saucepan.

7. Mix vinegar and sugar well, add

8. Add the meat and salt& pepper

9. Mix until the meat is fully coated with masala

10. Cover saucepan and cook/braise on moderate heat for a few minutes.

11. Stir from time to time until meat is well braised. Add potatoes and carrot

12. Add water when ever needed-don’t let it dry out.

13. When potatoes are ¾ cooked add the chopped tomatoes.

14. When potatoes are cooked, stir and add coriander leaves

To assemble the bunny

Hollow out the inner, keep intact.

Scoop meat, potato to your delight – garnish with more greens, or for the very brave: add chopped fresh green chilies.

Use the bread that was scooped out to suck up all the gravy.

Best serve with salad.
