Weekend Winner: Recipe for quick and easy nachos

Whip up this tasty snack to enjoy in front of the telly!

INGREDIENTS

500g lean beef mince

Can of mixed beans in brine

Can of beans in chakalaka sauce

½ cup of sour cream

1 avocado

A handful of grated cheese

Nachos corn chips or doritos

1 onion

1 tomato

½ tsp of garlic

Mixed herbs

Salt to taste

1 tsp of canola oil

1 tsp mayonnaise

Salt and pepper to taste

DIRECTIONS

In a non-stick pan, heat a dash of oil and brown onion with garlic and mixed herbs or any additional spices. Add mince to the pan and stir. Add mixed beans and chakalaka beans into the mix. Cook for 10 minutes and let it simmer. Once cooked, place corn chips into a baking tray. Spoon over the mince. Sprinkle the cheese on top. Place in the oven at 180 degrees until the cheese has melted. Top with sour cream. Mash your avocado and add teaspoon of Mayonnaise and salt to taste for the guacamole. Serve with salsa or green salad.

TIP

To make a zingy salsa, you need 1 chopped tomato, one chilli, 1⁄4 cup chopped mint or coriander and finely chopped red onion. Toss together with lemon or lime juice.
