Three delicious recipes especially for spring
Now that we are enjoying spring, the family braai will be well used. Here are two recipes that go well with a braai and one family favourite for supper.
Marinated lamb chops
Lamb chop recipes will always be on the top of any South African’s favourite food list. So, don’t be boring – spice up your next lamb chop meal with this delicious marinade that’s suitable for the grill or the braai.
It is simply a matter of mixing it all together and allowing the lamb chops to soak up all the flavour. You can substitute the oregano for rosemary – it’s your choice.
Prep time: 1 hr & 15 min Cooking time: 10 min
Serves: 4
Ingredients
1 Tsp butter or margarine
1/2 Tsp lemon zest
2 Tsp lemon juice
2 Tsp fresh oregano chopped
2 Tsp garlic minced
1/2 Tsp salt
Pinch of pepper
8 lamb chops (trimmed of fat)
Method
Melt the butter or margerine over a low heat and add the lemon zest, lemon juice, oregano, garlic, salt and pepper. Mix well. Pour into a sealable container and add the lamb chops. Seal the container and allow to marinate for 1 hour. Grill or braai the chop for about 4 minutes per side (medium rare).

Classic macaroni & cheese
Your family will love this delicious macaroni and cheese recipe. And you will love how simple and easy it is to make. Using just seven ingredients, you can serve up some wholesome comfort food in less than an hour. This recipe is vegetarian, but you can always add your favourite meat, like chicken strips or tuna.
Prep time: 15 min Cooking time: 30 min
Serves: 6
Ingredients
2 cups traditional macaroni (cooked according to packet instructions)
3 Tsp butter or margarine
1/4 cup onion, chopped finely
1 Tsp flour
Pinch of salt & pepper
2 cups milk
2 cups cheddar cheese grated
Method
Preheat the oven to 175oC. Melt the butter orargarine over a low heat in a saucepan on the stove. Sauté the chopped onion for about 5 minutes. Stir in the flour, salt and pepper. Add the milk, stirring until thickened. Remove mixture from the heat and add 1 1/2 cups of cheese. Stir until the cheese has melted.
Add the cheesy sauce to the cooked macaroni. Pour into an ovenproof casserole dish and top off with the remaining cheese. Bake for 30 minutes.
Serve with a garlic loaf or a side salad.

Pasta salad
Pasta salad recipes are a wonderful side dish for main meals – especially with a good old South African braai. It’s also an excellent choice for a light meal or a lunchbox meal.
This pesto Caprese inspired salad uses very few ingredients but certainly doesn’t skimp on taste. Whip this up if you’re pressed for time and want to enjoy some bold and simple flavours.
Prep time: 20 min Serves: 6
Ingredients
1 1/2 cups of pasta, cooked
3 Tsp basil pesto
1 Tsp butter or margarine
Pinch of salt
1/4 tsp garlic
Pinch of pepper
1/2 cup of cherry tomatoes, halved
1/2 cup mozzarella balls
Handful of fresh basil leaves shredded
Method
Melt the butter or margarine and mix in the pesto, salt, garlic and pepper. Toss in with the pasta. Fold in the tomatoes, mozzarella and basil.
Best served as a side dish.
