What’s for dinner?  BBQ roasted chicken and veggies

Who doesn’t love a one-pan dish? This easy, yummy one-pan chicken recipe with a mixture of veggies ticks all the boxes for a perfect family meal.

Serves 4 

You’ll need: 4 large chicken thighs; 4 chicken drumsticks; 2 cups McCain Garden Mix; 4 Tbsp olive oil; 3 large green chillies, chopped; 2 Tbsp sweet and sticky marinade sauce; 1 Tbsp sweet soy sauce; 1 tsp paprika; ½ tsp garlic powder; 1 tsp dry parsley; 3 tsp chicken spice; salt and pepper, to taste 

How to: 

Pat the chicken pieces dry with a paper towel. Transfer it to a large bowl, drizzle two tablespoons olive oil and add all season and spices and mix until chicken pieces are all coated. 

In a large pan, heat two tablespoons of olive oil over medium heat and add in chicken pieces. Brown the chicken pieces on each side for two to three minutes each side. 

Transfer the chicken to an oven dish and cover with foil. Transfer the dish to a pre-heated oven at 190°C and cook the chicken for 20-25 minutes. 

After 20-25 minutes remove the foil and add in chilli and frozen McCain Garden mix veggies, season with salt and pepper to taste. 

Transfer back the oven dish into the oven and cook for 15-20 minutes until the veggies are cooked through. 

Serve with creamy risotto or rice.
