Addie staff in the kitchen: Roast Tomato Soup
Winter is definitely on its way and it's time to try out different warming soups. This one is sure to please.
This week we made a delicious tomato soup using roasted tomatoes and garlic.
While it takes a little longer than other tomato soup recipes, the effort and time are well spent to make this incredible dish.
Ingredients
- 2 Tablespoons oil.
- 2 Onions, chopped.
- 2 Cloves of garlic, chopped.
- 30g Fresh Basil.
- 20 Tomatoes, blanched and peeled.
- 1 Tablespoon tomato paste.
- 2 Tablespoons Worcestershire sauce.
- 1 Cup beef or vegetable stock.
- 2 Bay leaves.
- 100g Mozzarella cheese, grated.
- Salt and pepper to taste.
- 2 Tablespoons sugar.
