We tried Ina Garten’s chocolate crème brûlée recipe this week and were amazed with the results. Try it now.

STEP 1: Gather all your ingredients

 

Ingredients: 

• 1 egg.

• 4 egg yolks.

• ½ cup of sugar, plus extra for topping.

• 3 cups (750ml) cream.

• 230g dark chocolate (bittersweet).

• 1 teaspoon coffee granules.

• 1 teaspoon vanilla extract.

*The original recipe says to add ¼ cup of coffee liqueur, but we thought we’d keep it family friendly. If you want you can add the alcohol.

 

Method:

STEP 2: Preheat the oven to 135°C and place 6 ramekins in a deep oven dish which is large enough to hold them flat.

STEP 3: Chop your chocolate into pieces.

 

STEP 4: In a large bowl, whisk together the egg, egg yolks and sugar until combined.

 

STEP 5: Scald the cream in a pot or saucepan (Warm it up to just before boiling).

STEP 6: Add your chocolate and coffee to the warmed milk and whisk until chocolate is melted.

 

STEP 7: Slowly whisk the cream/chocolate mixture into the egg mixture. Then whisk in vanilla extract.

 

STEP 8: Transfer mixture to a measuring cup (easier for pouring) and pour into ramekins until full.

 

STEP 9: Place the dish with the ramekins in the oven (without water) and quickly fill the dish with the hottest tap water, taking care not to spill into the mixtures, until about halfway to the top.

 

STEP 10: Bake for about 40 to 50 minutes until set around the edges but slightly ‘jiggly’ in the middle. Remove from water bath and cool until room temperature. Wrap in plastic and refrigerate until firm.

 

STEP 11: When serving, spoon sugar evenly on each custard and, with a kitchen blowtorch, heat the sugar until it caramalises evenly. Allow to cool for 5 minutes and serve.
