Make a hearty minestrone soup
This warms your body up from the inside and keeps you full for hours.
The best way to stay warm during the cold winter months is to eat a delicious homemade soup.
For a tasty soup try this recipe for minestrone soup.
You will need:
• Two tablespoons of oil.
• One carrot – cooked and chopped.
• One onion – cooked and chopped.
• Two celery sticks – chopped.
• Five cups of vegetable stock.
• One leek – cooked and shredded.
• One chopped potato.
• One can of chopped tomatoes.
• One clove of garlic – crushed.
• One cup of cauliflower broken into florets.
• Vermicelli noodles.
• Salt and pepper.
What to do:
• Heat the oil in a large pan. Add the carrot, onion and celery and fry until just beginning to colour.
• Add the stock, leek and potato. Bring to the boil, cover and simmer for about 40 minutes.
• Add the tomatoes to the pan with their juice, the garlic, cauliflower, noodles and salt and pepper to taste. Simmer for 12 to 15 minutes until the noodles are tender.
• Check the seasoning, spoon into individual soup bowls and serve with some toast or wholewheat bread.
