Meals for one or two for Christmas

Easy Christmas dinners for two that are simple and stress-free.

If you find yourself alone or just a couple for any meals over the Christmas period, cooking up a storm is not something you’ll most likely want to do, especially if you just want a quick meal.

Make sure you have chicken portions, bacon, cheese, fresh or frozen vegetables, frozen fish, tinned soup, potatoes, rice and salad ingredients in the fridge.

Meal ideas

• Baked chicken

Cook portions (one or two) in tinfoil in the oven, dot with butter before cooking. In a separate piece of tinfoil put slices of potato, dot with butter and season with salt and pepper. Bake both for +/- one hour.

Serve with a salad or frozen vegetables with melted cheese on top.

• Bacon omelette (for two)

Fry four rashers of bacon until cooked. Whisk four eggs together with a little water, season with salt and pepper, cook and when nearly set, add cooked bacon to one side and fold over. Serve with a side salad.

• Fish bake

Place fillets of frozen fish in an oven-proof dish, pour over a can of mushroom or tomato soup and bake in the oven for 30 minutes. Make rice and serve with frozen peas.

• Baked potatoes

Cook potatoes in a microwave. Split and grate cheese over the top, putting them back into the microwave for a minute until the cheese is melted.
