
CURRY cooking does not have to be complicated and, during my lessons, my aim is to teach ways to create simple, tasty curries using basic spices.
The following recipe is a sweet, spicy curried pasta, both simple and delicious!
Curried pasta
4 tablespoons olive oil
4 to 6 jam tomatoes, pureed
1 onion, finely chopped
4 cloves garlic, sliced
3 green chilli, chopped (optional)
1 tablespoon masala
1 teaspoon sugar
1 bay leaf
Grated cheddar cheese
Salt to taste
Sprig of curry leaves
Chopped coriander to garnish
250g pasta of your choice, boiled and drained according to instructions

Method
Heat oil, add bay leaf and fry for two seconds then add onion and chilli and cook till transparent.
Add masala, pureed tomatoes, sugar, garlic and salt to taste. Cook on medium heat for 10 to 12 minutes.
When the oil starts to rise to the surface, the curry is done.
Add pasta to curry and toss or grate cheddar cheese over and mix through.
Garnish with coriander.
