Delicious hot cross buns recipe

Now you can make your own at home.

Do you want to make your very own hot cross buns this Easter? Here’s a great recipe which will leave your friends and family wanting more.

This is what you will need:

• 100ml milk

• 10g fresh yeast

• 10ml water

• 30g castor sugar

• 1 egg

• 250g plain flour, plus extra to dust

• 1ml salt

• 10 to 15ml ground mixed spice

• 40g butter

• Oil, to grease

• 50g currants

• 15ml chopped mixed peel

For the crosses and glaze

• 50g plain flour

• Pinch of baking powder

• 10ml oil

• 15–30ml milk

• 5ml castor sugar

Method:

1. Pour the milk into a saucepan over a medium heat, bring it to scalding point and then let it cool to room temperature.

2. In a bowl, mix the yeast with the water and 2,5ml of the sugar to create a runny paste. Beat the egg and add it to the yeast mixture.

3. Put the flour, salt and mixed spice in a bowl. Cut the butter into cubes and rub it into the flour with your fingertips.

4. Make a well in the centre and pour in the yeast mixture and three-quarters of the milk. Stir with a cutlery knife adding enough of the reserved milk to make soft but not sticky dough.

5. Tip the dough out onto a floured board and knead for about eight or 10 minutes until smooth and elastic.

6. Place the dough in a very lightly oiled bowl and cover it. with a damp tea towel or oiled cling film. Leave in a warm place to rise for about an hour and a half.

7. Transfer the risen dough to a work surface and knock it back, kneading for two to three minutes and adding in the currants.

8. Divide the dough into eight equal pieces, shape into rolls and place about two centimetres apart on a large, oiled baking sheet. Flatten each slightly with the palm of your hand, and then cover with oiled cling film and leave to prove (rise) until doubled in size. Place in an oven preheated to 200 degree C.

9. Bake in the oven for 15 minutes, then brush the buns with the sweetened milk and return to the oven for five minutes, or until golden brown.
