Why not go all out this Popcorn Day with the most delicious popcorn cake?

National Popcorn Day is celebrated annually on 14 January.

This is the perfect day to treat yourself, whether you’re a conservative popcorn eater and you prefer the time-honoured sweet stuff while you’re watching a movie, or whether you are an experimental popcorn eater snacking on popcorn ice cream.

Here are some little-known facts about popcorn:

• Each kernel contains a tiny drop of water. This is why, when heated, the water expands causing the kernel to explode and flip inside out.

• Popcorn consumption declined significantly during the 1950s with the invention of the television. As Americans stopped going to the movies, they stopped eating popcorn. That is, until microwave popcorn restored the snack’s popularity.

• The world’s oldest piece of popcorn dates back more than 5 600 years, with archaeologists finding remnants of it from 3 600 BC.

As amazing as the classic buttered and salted popcorn is, we have welcomed the evolution of this ridiculously delicious treat.

• Popcorn with Smarties or Astros or any other sweets

• Caramel popcorn

• Popcorn with ice cream

• Popcorn with different sauces

Why not go all out this Popcorn Day with the most delicious popcorn cake? Here’s how:

Ingredients:

2 bags of microwave popcorn, popped and unpopped kernels removed

2 cups Smarties

1½ cups broken pretzel sticks

8 cups marshmallows

½ cup butter

Method:

Spray a large cake tin with cooking spray.

Once you have popped your popcorn, add 2 cups of smarties and 1 ½ cups of broken pretzel sticks.

Melt ½ cup butter in a large saucepan.

When melted add all the marshmallows.

Stir until melted and smooth, and remove from the heat.

Allow to cool for about 2 minutes while stirring constantly, then pour it over the popcorn mixture.

Stir until all the ingredients are combined and then press into the prepared tin.

Cover with foil and let the cake set for at least an hour to cool completely so it will cut easily..

When you are ready to serve the cake, loosen sides from the tin by running a butter knife around the edges.

Flip the pan over onto a serving platter.

The cake should come out quite easily.

Cover tightly and store for up to a day.
