Thirty-minute meals: grilled steak sandwich with blackened onions
This go-to combo is terrific as a sandwich but, truth be told, it's just as delicious as a main dish without the bread.
The blackened onions are key; adding so much flavour there’s no need for sauce.
You will need:
* Four plum tomatoes.
* Three tablespoons olive oil
* Salt and pepper.
* 500 grams steak.
* Two medium onions.
* Two tablespoons Cajun spice mix.
* French bread.
* Lettuce.
What to do:
Heat your grill to medium-high. In a bowl, toss the tomatoes with one tablespoon of the oil and a quarter teaspoon each salt and pepper.
Season the steak with half a teaspoon salt and a quarter teaspoon pepper and grill to desired doneness, four to five minutes per side for medium-rare. Let rest at least five minutes before slicing.
Meanwhile, brush both sides of the onion slices with the remaining oil and sprinkle with the Cajun spice. Grill until blackened and tender, five to six minutes per side. Grill the tomatoes just until charred, three to five minutes per side.
Form sandwiches with the bread, lettuce, steak, onions and tomatoes.
