Delish mother’s day dish

Make your Mom something extra special this Mother's Day.

The Delish Sisters, Rebecca and Kate Lund, have made a scrumptious name for themselves at the Litchi Orchard, but it would not have been possible without their mum.

The two girls grew up watching their mum, Kim, create delicious dishes and now the sisters treat her with mouthwatering food.

“We love to make our mum feel special and we generally do it through cooking for her,” said Rebecca.

“It changes between delicious brunches, baked goodies or a lovely dinner,” said Kate.

The culinary sisters have shared one of their recipes as a Mother’s Day treat for you to try and they promise it is fool-proof.

Chocolate truffles:

Ingredients:

150g milk chocolate (chopped into small pieces)

150g dark chocolate (chopped into small pieces)

1 tbs butter

½ cup cream

Toppings like cocoa powder, chopped nuts, gold dust, freeze dried berries

Method:

1. Heat the cream and butter until the butter has melted and the cream is warm but not melted.

2. Put the chopped chocolate into a microwave safe bowl and pour the warm cream over the chocolate.

3. Heat the cream and chocolate mixture in the microwave at 30 sec intervals, stirring in-between, until all the chocolate is melted.

4. Place the bowl in the fridge for at least 4 hours until the chocolate is set.

5. Once the chocolate has hardened using a teaspoon scoop out the truffle mixture and roll into balls.

6. Roll the chocolate balls in any toppings of your choice and allow them to cool for 15 min in the fridge.
