
Madam – For those of us with specific dietary constraints, substitutes for the products that are purpose made for us, and which are usually exceptionally expensive, are greatly appreciated.
Therefore, if you are gluten intolerant and find both that the price of gluten free bread exorbitant at R45 per loaf, and the fact that some loaves are so badly mauled at the store, I have an alternative.

I located an inexpensive gluten free bread recipe, that is easy to follow and produces a truly tasty loaf of bread, which I would like to share with your readers.
The ingredients are as follows: 2 cups gluten free flour, 1 egg, 2 tsp bicarb, half tsp salt, 1 and half cups milk (or soy or goat), 3 tbsp oil and 1 and half tbsp sugar.
Method: mix all wet ingredients in a bowl then add the dry. Oven preheated to 180C. Prepare bread tin with cooking spray. Bake 25 – 30 min or until golden brown.
Cost to bake, about R15 and with a dab of butter tastes wonderful. Bon appétit.
(PS. We added the sugar to the recipe, just to give the loaf a bit of sweetness.)
