South Africans are a braaing nation and what better way to celebrate Christmas than on a braai?

Why celebrate Christmas on the braai? For one, braai time is bonding time whether it is with your family or friends, it is how South Africans spend time with those close to them.

Christmas in South Africa is in the middle of summer unlike various other countries where Christmas becomes a winter wonderland.

Nobody wants to be stuck indoors in the middle of summer so why not light a fire outside and do it differently this year?

Butterflied leg of lamb (serves six to eight)

Ingredients:
• 1.5 to 2kg leg of lamb, butterflied (the butcher knows best)
• 200ml buttermilk
• Seasoning
• Oil

Ingredients for seasoning:
• 1tbs ground cumin
• 1tbs paprika
• 1tsp onion flakes (you can use fresh onions too)
• 2tbs dry rose petals (not essential)
• 1tbs salt
• 1tbs turmeric
• 2tbs chilli flakes (leave out if you don’t like spicy food)
• 1tbs tamarind paste (not essential)
• 3tbs fresh parsley, finely chopped (essential)
• 2tbs pine nuts, toasted and ground (could be substituted with cashews or macadamias)
• ½ teaspoon pepper
Combine in mixing bowl.

Lamb:

• Mix the buttermilk and seasoning to form a marinade for the lamb (for best results, rub directly into the meat before marinating). Ideally leave overnight, otherwise leave for at least three to four hours. Grill with oil.

• Cook lamb over medium coals for 30 to 40 minutes depending on your preference. Remove and set aside for five to 10 minutes.

• Slice and serve.
