Melt-in-your-mouth Hot Mud Pudding

If you’re in the mood for a rich, decadent chocolate dessert and don’t mind getting your hands dirty, try this recipe for Hot Mud Pudding.

Served straight out of the oven with a dollop of vanilla ice cream, it is a chocolate lover’s dream.

Ingredients:

Melted butter for greasing your pan,

Cocoa powder for dusting,

275g dark chocolate (at least 70% cocoa solids),

225g unsalted butter,

400g caster sugar,

1 tsp vanilla extract,

5 large free-range eggs, beaten,

200g plain flour, sifted,

8 metal pudding bowls or ramekins

Method:

Heat the oven to 180 C. Brush the pudding bowls sparingly with melted butter, dust with cocoa powder and shake out the excess. Set aside.

Melt the chocolate and butter in a saucepan. Remove from the heat and stir in the sugar and vanilla extract. Leave to cool slightly.

Whisk the eggs into the mixture one at a time, then fold in the sifted flour and a little salt until you have a smooth mixture.

Divide the mixture between the moulds, – each one two thirds full. Place on the middle shelf of the oven and bake for 12 minutes exactly.

Remove from the oven, run a knife around the edges, invert and tip out on to serving plates.

Serve immediately with vanilla ice cream and fresh seasonal berries.

However, if you’re not willing to slave away in the kitchen, head over to Oyster Inc for their rich, moist Hot Mud Pudding that has been steam baked to perfection and soaked in a rich syrup. It is covered with sticky chocolate sauce and served with ice cream or cream.

This decadent chocolate treat will only set you back R39,90.
