#WFD – Creamy Fish Stew

POLOKWANE – Simple fish recipes can be tough to find. This different yet tasty recipe shows you how to make a stew using fish instead of red meat, says What’s for Dinner.

Ingredients

  1. 1 onion, finely chopped
  2. 2 green peppers, chopped (seeded)
  3. 15ml oil
  4. 1kg frozen fish fillets
  5. salt and freshly ground black pepper
  6. the juice of 1 lemon
  7. 250ml cake flour
  8. 1 x sachet KNORR Chicken and Mushroom Pan Dry Cook-in-Sauce
  9. 30ml tomato paste
  10. 30ml chutney
  11. 1 pinch Robertsons Rosemary
  12. 10ml finely parsley, chopped
  13. 400ml milk

Method

  1. Heat oil in a frying pan and sautè the onions and green peppers for a few minutes.
  2. Remove from the pan and set aside.
  3. Season the fish with salt and pepper.
  4. Squeeze lemon juice over it and roll in flour.
  5. Fry the fish until browned on both sides.
  6. Add the onion mixture, milk, KNORR Chicken & Mushroom Pan Dry Cook-in-Sauce, tomato paste and rosemary.
  7. Reduce heat and simmer for 5 minutes until the fish is done and the sauce has reduced slightly.
  8. Scatter the parsley on top and serve with rice.
