#WFD – Baked Sweet Potato with a Smoked Chicken Filling

Garnish with fresh herbs and crumbled feta cheese.

POLOKWANE – Baked potatoes are not only easy to make but when accompanied with the right ingredients, it is a full meal on its own.

Ingredients

  1. 6 medium sweet potatoes
  2. 150g smoked chicken
  3. 30ml fresh coriander, chopped
  4. 1 spring onion, chopped
  5. Robertsons Atlantic Sea Salt
  6. Robertsons Freshly Ground Black Pepper (to taste)
  7. 1 x KNORR Classic White Sauce
  8. feta cheese (for garnish)

Method

  1. Scrub the potatoes well under running water.
  2. Roast the potatoes in foil or steam them until soft inside (30-40 minutes depending on the size of the potatoes).
  3. Cut a criss-cross on the top of the potato and open up the potato.
  4. Mix the remaining ingredients together and top the sweet potato.
  5. Garnish with fresh herbs and crumbled feta cheese.
  6. Serve immediately.
