Add local flavour to Christmas with these South African recipes

Celebrate the holidays with a multicultural South African feast featuring three heritage dishes.

POLOKWANE – As the festive season fills homes with warmth and celebration, many families are looking for fresh ways to spice up their Christmas menus.

One delicious option is to explore South Africa’s rich tapestry of cultures through food.

This year, surprise your guests with a festive feast inspired by different communities, from classic Afrikaans desserts to aromatic Indian biryani and traditional Mopani dishes enjoyed across Limpopo.

Start with a sweet Afrikaans favourite: Classic Milk Tart (Melktert)

No South African culinary tour is complete without the smooth, comforting flavour of melktert.

Often enjoyed at family gatherings in Afrikaans communities, this creamy tart brings nostalgia and simplicity to the table.

Ingredients
For the crust:

  • 125 g softened butter
  • 100 g sugar
  • 1 large egg
  • 275 g cake flour
  • 1 tsp baking powder
  • Pinch of salt

For the filling:

  • 1 litre full-cream milk
  • 2 tsp butter
  • 1 cinnamon stick (or ground cinnamon)
  • 2 large eggs
  • ½ cup sugar
  • 3 tbsp cake flour
  • 3 tsp cornflour
  • 1 tsp vanilla extract
  • Ground cinnamon for dusting

Method

Step 1: Prepare the crust

Preheat your oven to 180°C and grease a 28 cm pie dish. Cream butter and sugar, then beat in the egg. In another bowl, sift the dry ingredients and combine to form a soft dough. Press into the dish, prick the base, and bake 20–25 minutes until golden.

Step 2: Make the filling

Heat milk, butter and cinnamon until just boiling. In a separate bowl, whisk eggs, sugar, cake flour, cornflour and vanilla.

Remove cinnamon stick, then slowly whisk the hot milk into the egg mixture.

Return to the stove and stir until the custard thickens.

Cool before pouring into the crust.

Step 3: Assemble

Pour the custard into the cooled crust, dust with cinnamon, and refrigerate for 3 hours.

Optional no-bake crust:

Mix 1 packet crushed Tennis biscuits with 100 g melted butter, press into a tin and chill.

From Durban to Polokwane, biryani remains a beloved centrepiece in many Indian households, especially during holidays.

Its fragrant layers of rice, spices and tender meat make it a feast all on its own.

Method

Clean 1 kg of meat (mutton, chicken or beef).

In a pot, combine the meat with salt, ginger-garlic paste, red chilli powder, green chilli paste, browned onions, cardamom powder, cinnamon, cumin seeds, cloves, crushed mace, mint leaves and lemon juice.

Add curd (yoghurt), ghee, semi-cooked rice, saffron, water and oil. Mix well.

Seal the pot with sticky dough along the rim, place the lid on, and cook on low heat for ±25 minutes.

Serve hot, garnished with boiled eggs, sliced carrots and cucumbers.

A delicacy in many Limpopo households, mopani worms are packed with protein and flavour.

When prepared well, they make a crispy, flavourful festive side dish.

Method

Soak the mopani worms in boiling water, salt and vinegar for about two hours.

Drain and transfer them to a pot with a little cold water.

Cover and boil for 5 minutes.

Drain again.

In the same pot, heat oil, add chopped onion, and fry for a minute before adding the worms to sauté until seasoned and fragrant.

Whether sweet, spicy or uniquely traditional, these dishes offer a delicious way to honour South Africa’s diversity this festive season.
