With summer finally here, more and more people are spending time in the outdoors, and Anna Mathatho, a chef at Bolivia Lodge shares her speciality dish you can make outside on the fire.

POLOKWANE – With summer finally here, more and more people are spending time in the outdoors, and Anna Mathatho, a chef at Bolivia Lodge shares her speciality dish you can make outside on the fire.

“The peach and butternut potjie is an easy meal to prepare outside on the fire and not expensive at all,” says Mathatho.

She has been a chef at Bolivia Lodge for three years and says she enjoys it a lot. “It is a nice job and I like all my colleagues.”

Her favourite dish to prepare is the beef stew, which she says she prepares with barbeque spices.

“I have three children and they love my cooking.”

Apart from the beef stew, she also likes to make the three-bean salad.

“In summer, you should make light meals like salads and cold meat.”

Mathatho’s peach and butternut potjie:

Ingredients:

• 500g peaches

• 2 medium butternuts

• ½ table spoon brown sugar

• 2 tablespoons butter

Method:

1. Cut the butternut in squares and place them in a dish with the peaches.

2. Pour sugar and butter over and bake for 10 to 15 minutes.

3. Dish up and enjoy.
