Try this yummy cheesecake recipe with a zing

The cheesecake is everyone's favourite dessert

POLOKWANE – But for many, the baked cheesecake is the least favourite.

Here is a recipe for a fridge tart cheesecake, which includes lime.

The recipe is easy and will not take more than half an hour to make, and it’s best to leave it in the fridge overnight.

Ingredients:

• 400 g digestive biscuits or ginger biscuits

• 200 g butter

For the filling

• 500 g cream cheese

• 2 cans of condensed milk

• 250ml fresh cream, whipped

• Grated rind and juice of four limes

Method:

1. Melt the butter in a saucepan and remove from heat.

2. Place the biscuits in a food processor and blitz until they are fine crumbs, or alternatively, you can place the biscuits in a plastic bag and crush with a rolling pin until they are fine.

3. Add the crumbs to the melted butter and stir to combine.

4. Tip into a greased and lined tin and press down firmly with the back of a spoon.

5. For the filling: put the cream cheese in a bowl and whisk until soft and creamy to prevent lumps from forming. This will make it easier to combine with the other ingredients.

6. Add the condensed milk and whisk again until well combined and smooth.

7. Stir through the lime juice and rind. Keep some of the rind to decorate.

8. Whip the cream to soft peaks then fold through the cream cheese and condensed milk mixture.

9. Pour over the base and smooth over with the back of a spoon.

10. Place in the fridge and leave to set for at least 12 hours or preferably overnight.

11. When set, remove from tin and transfer to a serving plate or cake stand and sprinkle over the remaining zest before serving.
