Ingredients
• 2 packets Tennis Biscuits
• 1 cup (250 ml) fresh cream (cold, for whipping)

• 1 large bar Peppermint Crisp chocolate (or 2 small bars), crushed
• Optional: extra chocolate for topping

Method
• Whip the cream until stiff peaks form.
• Fold in the caramel gently until smooth and well combined. Don’t overmix.
• Crush or grate the Peppermint Crisp and mix most of it into the caramel-cream mixture (keep some aside for topping).
• Layer the dessert:
• Place a layer of Tennis Biscuits at the bottom of a square or rectangular dish.
• Spread a thick layer of the caramel mixture over the biscuits.
• Add another layer of biscuits and repeat until you reach the top.
• Top with the remaining crushed Peppermint Crisp.
