Easy potato soup recipe to warm up cold winter nights

Here is what you will need:
• four to five medium potatoes
• one medium onion, diced
• two stalks of celery, diced
• one carrot, peeled and diced
• one cup of milk
• salt and pepper to taste
• parsley to taste
How to make:
• In a large pot, add the potatoes, onion, celery, and carrots. Add water so the vegetables are covered nicely.
• Set the stove to high and bring to a boil. Once it is boiling, reduce the heat to low and cover with a lid. Let the vegetables simmer until soft, stirring about every 20 minutes.
• Using a potato masher, carefully mash most of the soup, leaving a few chunks for texture.
• Stir in the milk and the parsley. Add 1 teaspoon of salt and 1/4 teaspoon pepper.
• The soup is now ready to serve and will thicken as it cools.
• You can stir in some cheddar cheese to make it a cheesy version, or add some diced bacon for a meat option.
