RECIPE: Bobotie

INGREDIENTS
1 slice white bread
125ml milk
15ml olive or avocado oil
1 onion, chopped
3 garlic cloves, crushed
30ml butter
1kg beef mince
125ml chutney
60ml raisins
45ml mild curry powder
5ml ground turmeric

FOR THE TOPPING
eggs
250ml milk
6 fresh lemon or bay leaves

METHOD
Preheat oven to 180°C. Grease a 1.5-litre ovenproof dish. Soak the bread in the milk.
Heat the oil on medium and sauté the onion and garlic. Add the butter and mince and fry for about 8 minutes until browned. Season. Mix in the soaked bread (with the milk), chutney, raisins, curry and turmeric. Fry for about 3 minutes until heated through. Season and spoon into the prepared dish.
For the topping, beat the eggs and milk together. Season and pour over the meat. Place the leaves on top. Bake for 30-40 minutes until the egg custard has set.

Tip: Serve with sliced banana, chutney, desiccated coconut, yellow rice and tomato and onion salsa.
