RECIPE: Warm taste buds with cheesy butternut and corn dish

Want to play with combinations? Well try this scrumptious combination of corn and butternut and yum it up with feta cheese.

Treat your family with this scrumptious corn and butternut dish that will make them wonder why it took you so long to try it out.

Ingredients

  • 1 butternut, peeled and cubed
  • 300g yellow corn (fresh or frozen)
  • ½ onion, finely chopped
  • 3 t of olive/vegetable oil
  • 1 pinch Salt and pepper
  • 1 T crushed garlic
  • 1T sugar
  • 300g feta cheese, crumbled

Method

  1. In a sauce pan boil cubed butternut together with corn in 1 litre water for 10 minutes.
  2. In a separate pan, preheat oil on medium heat, add onion and garlic and stir for 2 minutes.
  3. Add the boiled butternut and corn and stir continuously for 7 minutes and 1 T sugar
  4. Sprinkle feta cheese over the top
  5. Add salt and pepper to taste
