Diabetic-friendly recipe: Tomato and coriander breakfast scramble

Eggs are a source of protein and help to keep you feeling fuller for longer.

Enjoy a delicious, healthy breakfast on World Diabetes Day, Saturday, 14 November.

Serves: 4

Ingredients:
5 ml olive oil
3 baby red spring onions, sliced
1 half garlic clove, crushed (optional)
1 green chilli, finely chopped
4 eggs, beaten
3 tomatoes, seeded and diced
60 ml chopped coriander, plus extra for serving
1 loaf low-GI bread , or 100% rye bread, toasted, for serving.

Method:
Heat oil in a pan and fry spring onions, garlic and chilli for 2 minutes.
Tip eggs into pan and stir gently.
Fold through tomatoes and coriander while eggs are still soft.
Serve on toast topped with coriander.
