Braai Burgers

Just in time for summer!

Ingredients

Patties
900 g lean steak mince
2 eggs, lightly beaten
1 small onion, finely chopped
15 ml spicy French mustard
15 ml hot English mustard
15 ml garlic & herb seasoning salt
5 ml freshly-milled black pepper
125 ml garlic & herb salad dressing
125 ml spare rib marinade

Salad
1 iceberg lettuce, torn
30 g basil, shredded
1 punnet cherry tomatoes, halved
1 small onion, thinly sliced into rings
1 small cucumber, thinly sliced
175 g herb feta cheese, drained and diced
2 large cloves of garlic, slivered (or to taste)
180 ml Greek salad dressing
freshly-milled black pepper
for garnish: whole basil leaves
To serve
6 seeded rolls / wholewheat pita breads, toasted
1000 islands salad dressing

Method

First make the patties by lightly combining all the relevant ingredients, except the last two. Shape into 6 patties, each about 2 cm thick and 10 cm in diameter. Combine the dressing and marinade and set aside until required.

For the salad, place the lettuce, shredded basil, tomatoes, onion, cucumber, feta and garlic in a salad bowl and chill until required.

Just before serving, grill the patties over hot coals, under the oven grill or in a griddle pan for 4 to 5 minutes per side or until cooked to your liking, basting regularly with the dressing mixture.

To complete the salad, pour the salad dressing over the salad, season to taste with the pepper, toss lightly and garnish.

To serve, place a generous portion of salad onto each roll or into each pita, add a patty and pass around the 1000 Islands dressing.

Serves 6.
