
INGREDIENTS
1 tablespoon olive oil
1 medium brown onion, finely chopped
1 teaspoon Coles Chilli Flakes (optional)
400g can Coles Diced Tomatoes
400g Coles Thawed Seafood Marinara Mix (from the deli)
375g Coles Australian Spaghetti No.1
1 bunch flat-leaf parsley, thinly sliced

METHOD
Step 1
Heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring, for 5 mins or until onion softens. Stir in the chilli, if using, and cook for 1 min or until aromatic. Add the tomato and bring to the boil. Reduce heat to low. Simmer for 5 mins or until sauce thickens slightly. Season.
Step 2
Add the marinara mix and gently fold through the sauce. Reduce heat to very low. Cook for 2 mins or until seafood is just cooked through. Remove from heat.
Step 3
Meanwhile, cook the pasta in a saucepan of boiling water following packet directions or until al dente. Drain.
Step 4
Add the pasta and two-thirds of the parsley to the seafood mixture. Gently fold to combine. Top with the remaining parsley.
