This week they shared their recipe for lamb with basmati rice and yoghurt sauce.
Ingredients
1kg lamb
3 tablespoons butter
2 onions
2 clove garlic, finely chopped
1 teaspoon paprika
Spices – one pinch of clove, cumin, coriander seeds and cinnamon
1 cup plain yoghurt
Rice
250g basmati rice
4 cardamom pods
4 cloves
1 cinnamon stick
2 fresh bay leaves
1 teaspoon turmeric
Yoghurt sauce
400g yoghurt
Juice of 1 lemon
1 tablespoon mint leaves, chopped
Salt
Method
• Cut the lamb into large cubes
• Heat the butter and brown the meat over a fairly high heat. Add onions, garlic, and spices. Cover and cook in the oven at 180 degrees for about 1 hour and 30 minutes. Stir occasionally and add more water if necessary
• Meanwhile, put the rice into a pan with the spices. Add double the amount of water. Cover it and bring it to the boil. Simmer for about 25 minutes, until cooked
• For the yoghurt sauce, mix all ingredients and season with salt to taste
• Take the lid off the curry and leave to brown for about 10 minutes. Check the seasoning and serve with rice, yoghurt sauce and poppadom.
