A refreshing treat for the festive heat

THE idea of a fruit salad sounds good – until you think of the soggy brown mess it can so easily become!

A common mistake that leads to a fruit salad flop is including pieces of fruit that are either too mushy or too crunchy, so make sure all your fruit is perfectly ripe.

It goes without saying that the fruit should be fresh, and that a fruit salad cannot be made hours ahead of time.

Stay away from bananas, as well as paw paw. Their textures are too soft for a fruit salad – as soon as you start tossing it, the pieces will disintegrate and give off their overwhelming flavour.

Get over the notion that a fruit salad should contain all the fruit you could possibly think of. By adding too many different kinds of fruit, your salad will end up tasting generically ‘fruity’.

Choose flavours of just a few stars that go together well. A good rule of thumb: if the fruits taste great together in a smoothie, they’ll also work in a salad.

Opt for a simple combination like slices of peach, plumb and apricots.

Add a handful of nuts, or some crumbed feta cheese to boost the flavour.

Lastly, garnish with fresh mint leaves.
