Natalie Payn’s Toffee ‘Tamaletjie’

Ingredients

500g of sugar

250ml water

125g of margarine

2ml vanilla essence

Method

  • Dissolve sugar in water over low heat.
  • Add margarine and boil steadily without stirring to light-crack stage.
  • Add vanilla
  • pour into well-greased baking tray.
  • When slightly cooled mark squares with a knife.
  • When cold and set, turn out and break into squares.
