Finger-licking sticky coffee pork ribs
You might believe that pairing pork with coffee would be ridiculous, but in reality, the combination works so well.

These delicious sticky coffee pork ribs are served in 20 minutes, it does not get better than that! Recipe compliments of Instapot.
Ingredients
Ribs rub:
- 500-600gr pork ribs (membrane removed)
- 1 tsp salt
- 1 ½ tsp paprika
- 2 tsp blended black pepper
- 2 tsp extra olive oil
Sauce:
- 1 tbs instant coffee granules
- 3 tbs brown sugar
- 1 tbs maple syrup
- 2 cloves garlic, finely chopped
- 3 tbsp BBQ sauce
- 1 tbs apple cider vinegar/rice vinegar
- 1 tbs soy sauce
- 80ml water
- 1 cinnamon stick
- 2 star anise
- 1 tsp chili flakes
Method
- Mix all the dry rub ingredients, add olive oil, and coat the ribs on both sides. Set aside to marinate for 10-15 minutes.
- Combine all the sauce ingredients in a saucepan and bring to a simmer.
- When the sauce thickens and thinly coats the back of a spoon, set aside to slightly cool then remove the star anise and cinnamon stick.
- Baste the ribs on both sides using ¾ of the sauce.
- For best results, set aside and let it marinade in the fridge for 30-60 minutes or overnight.
- Air fry for 20 to 25min at 180 °C
- Once cooked, brush the ribs with remaining sauce and enjoy with a squeeze of lime and a side of your choice.
