Raymond Petrowski, store manager at Food Lover’s Market, Krugersdorp, shares some tricks and tips for cooking oxtail.

• As oxtail is a bony gelatine-rich meat, it needs to be slow-cooked with steady heat to allow the meat to be cooked till it falls off the bone.

• Oxtail can be cooked on the stove-top or cooked in a potjie.

Raymond says a perfectly cooked oxtail will take about three hours to prepare but it is important to check on the cooking of the oxtail every 15 to 30 minutes to ensure even cooking.
